Celeriac and celery walnut gratin

- 300g celery
- 1 tbsp olive oil
- 150g creme fraiche
- 50g comte
- 2 tbsp parmesan
- 1 tbsp chives
- 2 tbsp walnuts
- 0 black pepper
Step 1
Preheat the oven to 180C/350F/gas mark 4.
Step 2
Peel the celeriac and cut into thin slices.
Step 3
Cut each slice into thin matchsticks.
Step 4
Peel the stalks of celery and cut into 3-4cm lengths.
Step 5
Cut each length into thin matchsticks.
Step 6
Season everything well and toss with olive oil.
Step 7
Transfer to a baking tray in the oven for 20-30 minutes, or until the celeriac is tender.
Step 8
Set aside to cool.
Step 9
Mix with the creme fraiche, half the cheese and the chives.
Step 10
Season well and put in a baking dish, lightly pressing down to compact the veg.
Step 11
Sprinkle with the walnuts and the rest of the cheese and bake for about 40 minutes or until golden brown.
