The stir-fry: Keralan coconut prawns

- 3 tbsp rapeseed oil
- 10 curry leaves
- 1 large red onion
- 5 cloves garlic
- 3g fresh ginger
- 0.333 tsp turmeric
- 0.75 tsp black pepper
- 0.75 tsp red chilli powder
- 75g fresh coconut
- 500g raw and peeled king prawns
- 1.5 tbsp fresh lime juice
- 0.5 tsp salt
Step 1
Heat the oil in a frying pan over a medium heat.
Step 2
Add the curry leaves.
Step 3
When they crackle, add the onion.
Step 4
Cook for 8 minutes, or until soft and starting to brown.
Step 5
Add the ginger and garlic.
Step 6
Cook for 5 minutes, then add the turmeric, black pepper, chilli and coconut.
Step 7
Stir in the prawns.
Step 8
Cook for 4 minutes, or until pink.
Step 9
Add the lime juice and salt, give them a final stir, then take off the heat.
