Jerusalem artichoke and kohlrabi salad

- 1 kohlrabi
- 0.5 lemon
- 8 sprouts
- 1 bunch watercress
- 3 tbsp olive oil
- 2 tbsp parsley
- 0 black pepper
Step 1
Peel the jerusalem artichokes and kohlrabi.
Step 2
Leave in water with a little lemon juice until needed.
Step 3
Prepare the watercress and whisk together the dressing ingredients.
Step 4
Just before serving, grate the artichokes and kohlrabi or cut into fine julienne.
Step 5
Toss with the dressing and the shredded sprouts.
Step 6
Fold through the watercress.
