Grilled whole trout with herb butter

- 4 trout
- 0 Extra-virgin olive oil
- 0 Salt
- 85g butter
- 15 tbsp shallot
- 0.5 clove garlic
- 1 tbsp lemon zest
- 2 tbsp lemon juice
- 2 tbsp capers
Step 1
Lightly oil the trout, season, and place on hot, clean grill about 5cm from embers.
Step 2
Cook for 4-6 minutes on each side, or until it looks white and cooked through.
Step 3
Add all herb butter ingredients to bowl and mix to incorporate.
Step 4
Spoon herb butter over trout and serve.
