Cucumber and avocado soup with mango salsa

For the soup
- 2 large cucumbers
- 1 large hass avocado
- 2 spring onions
- 80g water
- 2 tbsp freshly squeezed lime juice
- 0.25 tsp salt
- 0.25 tsp black pepper
For the salsa
- 170g mango
- 75g
- 20g fresh coriander
- 1 tbsp olive oil
- 1 tbsp freshly squeezed lime juice
- 0 black pepper
Step 1
To make the soup, put all the ingredients in a blender and process until smooth, adding a bit more water, if needed, to achieve a creamy texture.
Step 2
Taste and add more salt if desired.
Step 3
To make the salsa, put all the ingredients in a small bowl, season, stir to combine, then serve the soup topped with the salsa.
