Baked rhubarb

- 1 bunch rhubarb
- 125g castor sugar
- 0 orange
- 2 vanilla beans
Step 1
Stalks the size of a finger are a good measure.
Step 2
The sugar will melt into a hot pink syrup.
Step 3
Pre-heat the oven to 180C (350F).
Step 4
Lay rhubarb on a tray in one layer.
Step 5
Sprinkle the sugar over the rhubarb evenly, zest the orange over the top and place the vanilla beans atop.
Step 6
Cover, either with a lid or foil, and roast for 20 minutes.
Step 7
When they’re ready they need to be soft but still holding their shape, so after the first 20 minutes check every few minutes until they are.
Step 8
Test them with a knife.
Step 9
Serve hot with waffles or pancakes.
