Banana cake

- 150g softened butter
- 150g soft brown sugar
- 80g sultanas
- 300g plain flour
- 2 tsp baking powder
- 0.5 tsp bicarbonate of soda
- 2 eggs
- 100g vegetable oil
Step 1
Preheat the oven to 180C (355F, gas mark 4).
Step 2
Butter a 900g loaf tin and line with baking paper.
Step 3
Peel and mash the bananas.
Step 4
Mix the butter and sugar together until fluffy, then stir in the bananas and sultanas.
Step 5
Sift the flour, add the baking powder and bicarb to it and add to the banana mix along with the beaten eggs, beating well as you go.
Step 6
Add the oil and stir well.
Step 7
Pour into the loaf tin and cook for 40-45 minutes.
